Pam’s famous pistachio cake is a fan favorite here at The Agent! We ask her to make it every chance we get. Fluffy cake, sweet pineapple, and dreamy whipped topping make this pistachio cake a crowd pleaser. Try it at your next summer get-together!
Pistachio Cake Ingredients:
- 1 box yellow cake mix
- 1/2 cup oil
- 4 eggs
- 2 boxes of instant pistachio pudding
- 1 1/3 cups water
- 1 can crushed pineapple in juice (not syrup)
- 1 package Dream Whip (box comes with two packages)
- 1 1/2 cups milk
- 1 container of Cool Whip
- Chopped pistachios (if desired)
Instructions:
- Make the cake by combining cake mix, 1/2 cup oil, 4 eggs, 1 box instant pistachio pudding and 1 1/3 cups water in a bowl. Beat at medium speed for 2 minutes. Bake at 350 degrees for 35-40 minutes. The cake is done with a toothpick comes out clean.
- While the cake is cooked but still hot, poke fork holes in cake and pour strained pineapple juice over the cake.
- Spread pineapple over the cake.
- Cover and let cool completely.
- Meanwhile, beat 1 package of Dream Whip, 1 box of instant pistachio pudding and 1 1/2 cups of milk together for at least 5 minutes on high speed. You want the mixture to be very thick, making peaks with the beater.
- Spread the mixture over the completely cooled cake.
- Spread the Cool Whip over the top of the cake and sprinkle with nuts if desired.
